No Bake Cookies

The other night, after finishing up dinner, Luke asks "So, what's for dessert?" These cookies immediately came to mind because they are super fast to whip up! Plus, I usually have all the ingredients on hand. These are just about the easiest, fasted cookies I know of. They are super peanut buttery, chocolaty, rich, and delicious.  They, however, are lacking in the looks department. They sort of remind me of mini cow patties. But don't let that fool you, these are so yummy!

No Bake Cookies

Ingredients
  • 2 cups sugar
  • 4 tablespoons cocoa
  • 1 stick butter
  • 1/2 cup milk
  • 1 cup peanut butter
  • 1 tablespoon vanilla
  • 3 cups oatmeal

Directions

In a heavy saucepan, bring the sugar, cocoa, butter and milk to a boil. Continue to boil for 1 minute. Remove from heat and quickly add peanut butter, vanilla and oatmeal. On a sheet of waxed paper, drop mixture by the teaspoonfuls.

Wait about about ten minutes for the cookies to cool and harden. Serve to hungry hubby!
